Give Time For Memories To Marinate

Have you ever had a day where so much happened and experiences shared but then you go on to the next day and there it happens all over again? Sometimes these occur on vacations where you are out of your ordinary and you experience so much in a single day. Think about what can happen on a vacation in 7-9 days. Each day can be soooo rich and the experiences stack on each other and there isn’t the time you need to realize the richness that occurred.

I was watching a show on street food today and heard the word “scallops”. A flood of memories came to me from a recent vacation with close friends. These close friends wanted to do a big cook-out with fresh seafood picked up at a local seafood market and restaurant. We had talked about doing tuna fillets before the vacation even began. But when we arrived at this favorite restaurant of ours and had eaten together, afterwards, the men went up and picked out some fresh tuna and shrimp but also purchased scallops. The only scallops I’ve ever had were smaller ones that have been deep-fried. I always loved them but the little ones have a bit of bite to them masked by the breading around them.

The evening arrived for our fresh seafood feast. The tuna steaks cooked just right. The skewers with scallops, fresh mushroom, onion and green peppers on them. The delicious shrimp. It was an amazing feast. The taste was out of this world. Our chef was out of this world. We sat together enjoying our food beside palm trees and a view of the Gulf of Mexico. It was the perfect weather outside.

Life has a way of rushing by way too quickly and one is jolted back to the beautiful moments that were had, by a simple word heard. Scallops. Thank you friend for the food, your love invested in your cooking. You have this loving and generous way that is something of a gift to others. We are so grateful to have you in our lives and I don’t tell you that enough. Thank you for your loving presence and sharing your family with us!

By the way, the scallops were the closest thing to heaven as I can describe. They melted in your mouth and yet had substance.  I can’t wait to grill scallops again on the beach in the future.
